Region: Dimtu, Dikitu Producer: Gizaw Alemayehu Altitude: 1800-2122 masl Variety: Heirloom Processing: Washed Tasting Notes: Lychee, Orange, Lime About: Founded by Gizaw and Frehiwot, G&F continues a family legacy in Ethiopian coffee. Gizaw’s father, Alemayehu, once owned coffee farms in Yirgacheffe until they were nationalized in 1974. Rather than farming, Gizaw and Frehiwot focused on modern coffee processing to fulfill his father’s vision.

This lot comes from over 350 smallholder farmers in Dikitu. Handpicked cherries are delivered to Gizaw’s washing station, where they are meticulously sorted, fermented for 36–72 hours, washed, and dried on raised beds for up to 15 days to ensure exceptional quality.

Hario V60

16g coffee with 32g of water. Wait 30 secs for bloom. Add 224ml of water. Swirl and wait 2-3mins for extraction.

Chemex 6 cup

30g coffee with 60ml of water. Wait 30 secs for bloom. Add 420ml of water. Swirl and wait 2-3mins for extraction.

Aeropress Traditional

17.5g coffee with 200ml of water. Agitate and wait 30 secs. Add 80ml of water and agitate. Plunge after 1min 30 sec.

Plunger

30g coffee with 500ml of water. Wait 5 minutes. Agitate. Plunge after 5 mins and 10 secs.

We always roast your coffee fresh to order. It takes 2 business days to roast and pack your order ready for delivery to you once we receive your order. We then use the services of Australia Post to get your order to you as quickly as possible. Australia Post generally experiences delays with Parcel deliveries during peak periods. Please be aware that Australia Post is currently experiencing small delays in non-peak periods. At Brew, we always track your delivery and will send a tracking confirmation link to your email.

Note – Friday and weekend orders: If your order is placed on Friday 12pm through to Sunday, it will be dispatched on the following Monday. If Monday is a Public Holiday, then dispatch will occur on the Tuesday.
